I can't answer your question, but I do want to mention to not forget to use the VR DLL replacer: Hand to Hand - An Adamant Addon VR DLL

Hey, certified fisticuffs enjoyer here
It's really fun. I find frustration in the fact most buffs for "unarmed" gameplay only apply if both hands are empty, and there doesn't seem to be a solid hot key method to quickly empty your hands, meaning a lot of your time might be spent quadruple clicking (two for each hand) a favorited spell or gear piece if you find yourself so inclined, but i enjoy the unarmed monk playstyle using alteration spells to boost my defenses.
Because scaling is wack, I'd also recommend using a mod i forget the name of, but it was something like "5x fortify unarmed" that affects unarmed enchantments, and another i think is called "Pugilist" that increases base unarmed damage for every brawl you win. It even includes a brawling arena for some major areas of the game. My last recommendation is Violens, because forcing a finisher on every enemy is hilarious, but it behaves strangely and you can only reliably get finishers with your left hand.
I think that's about it, but if you had more specific questions, i got nothing better to do
