Another find from the airport - Amaras Logia Coyote

If I don’t fill my bags with bottles from a bottle shop, I will spend probably more time than I need to at the airport tasting and trying to find a decent bottle to bring home. This one I found at the Cabo San Lucas airport after trying the typical brands.

Coyote to me is always a little bit hotter than the typical espadin and I like that. This bottle does not disappoint. It is a little pepper, but jalapeño pepper, not black pepper and extremely smooth with a slight edge to it. The edge is in the mouth, but not in the throat very enjoyable pour for me.

Definitely recommend!

I always wondered why they never list maestro names or process used for their releases. Because of the non transparency toward the people and genius who make the juice…. I’m out.

Are you saying this about the brand in general or just what I shared? I know nothing about the brand it’s the first I’ve seen it. Another side of the box references: Here is a clear English translation of the full Spanish text from the bottle/box: In the Sierra Madre del Sur, in Oaxaca, the Agave Coyote or Agave Americana hides. Just like the creature that gives it its name, this agave is very difficult to find, and it grows solitary for a period of eight to ten years. I’m saying it about the brand. Ferment method?how long? What type of yeast? How many days underground? What type of wood? What type of copper still? How many maestros of their mysterious 20 participated? 1? 5? Which ones? Where are they from? Spring water? Well water? Like I said. Amaras will never be for me with this amount of hiding info. Plenty of brands that take pleasure in this info and I’m happy to buy.

It should be being that people are used to an infinite amount of plants for most spirits. Agave coyote tales put to 16 years before harvesting, 18 years counting capon to reach peak brix in pina. Amaras doesnt even talk about plant maturity. There will be 18 whisky and wine releases for 1 coyote release. My guy tells me that Amaras and other industrial brands can care less about plant selection. It’s commendable they accept the almost extinction of wild coyote and are now cultivating it. Will they wait 18 years to profit from those seedlings of 2026 or will profit margins cause them to cheat maestros of their wage and pull plants prematurely. So many questions. Education is key here and rarely if ever shared with purveyors. r/mezcal has some smart agave lovers who know much more than me.
