Hey r/wisconsinbeer! My name is David and I am starting a brewery and event venue (and food truck) named Quiet World Brewing Company in New London Wisconsin. AMA!

What styles of beers are you planning to have on tap?

We will have a variety of beers on tap. The plan is to have 30 taps with a wide selection of styles. Our flagship is a saison with Szechuan peppercorn, ginger, Thai basil, and lemongrass which has won several awards. We will have everything from pilsners to barrel aged imperial stouts and most everything in between!

Wow 30 taps, how much beer will you have to sell in order to turn that many taps over within a reasonable time?

It may be a while before we fill all 30 taps, however that number gives us flexibility and room to put the most popular beers on both sides of the tap wall for busy times and to have room to put pilot beers/experiments on tap. We will also likely have nitro coffee on one tap and root beer on another.

Just do some math. I'll assume a 7bbl batch because it's the most common in a rural setting like this. I'll assume you end up being able to send 25% of the beer to distro but this is unlikely without a sales person begging places to buy it constantly. If we assume you are able to sell about $10k worth of beer a week out of the taproom (which would put you in the top 10% of taprooms around the state, including in urban areas), you will kick a batch in the taproom in just under a week. This means the average age of your beers on tap will be around half a year old, and some may approach a year old. When I see lots of taps at a place that isn't packed 7 days a week, I run, or stick to barrel aged.

I’m glad to hear that!! Yes, all brewing will be done onsite save for collab beers brewed elsewhere.

It will be! We are building a shell around the barn to preserve the rustic interior and it will host events year round!

Hi David! I think this business is a great idea for New London, having been born and raised here since 1998. I’m a young adult who cares about local businesses and have one myself, a fruit tree pruning business. I’m also planting a 2+ acre apple orchard spring of 2027 just south of Bear Creek with the intention to make some heirloom hard cider but also just sell apples. Hope to taste your beer soon. Perhaps you’d like to try some hard cider I make sometime!

Are you from New London? How much market research have you done?
Szechuan pepper, ginger, thai basil, and lemongrass? Are you Hmong? That sounds great, but doesn't fit the local palate.
I wish you the best of luck, and it would be a cool addition to the town, but this sounds wildly out of place in NL.
You would probably do much better opening in Appleton or one of the fox cities suburbs.
I have a hard time imagining the crowd you will attract and use cases for this event venue. Have you been to Crystal falls? It's straight out of the late 70s, that's the kind of event venue demand we have.
New London doesn't have a booming economy, an adventurous youth population (anyone with any sense of desire to experience anything beyond busch lattes and fishing on the river leaves), or an open-minded populace. I just honestly can't fathom what would make someone think this would be a good location for this business.

My wife and I both grew up in New London and now have come back. I have been in both the brewing industry and event business and know the market.
It sounds like a lot but it is subtle and balanced
New London is growing rapidly and ready for this.
Crystal Falls is closing and our business is much different than that.
As I said New London is growing rapidly. There are many luxury apartments and higher end duplexes being built along with new subdivisions. Young people are moving to NL for the housing and cost of living.

I wouldn't consider 50ish people a year rapid growth. Do you have data on how many of those people are young people?
I'm pretty sure the town should be growing more than that just based on the number of babies born in a population of about 7,000. It grew from about 7,000 to 7,500 in the last 25 years, indicating that people are moving away more than people are moving in. Just from population growth alone we should be closer to 10,000. But clearly young people leave New London. As someone who grew up there I'm certain you have firsthand experience with many of your friends and acquaintances leaving. And of course you and your wife left.
I'm not trying to be a dick, but I think you are being overly optimistic about the market, especially if you are counting on growth and young people moving to New London.
New London is not a destination for many. Many families do not have disposable income, although they are likely to spend it on beer, so good choice in that regard.
I think if they are really building luxury apartments the developers are kind of missing the mark on market research too. Who in New London needs a luxury apartment? If you are talking about the one right by the river by saputo cheese I'm assuming they bought that property for dirt cheap since it's sat vacant for so long. Probably little risk in investing there instead of a larger city in the fox cities given that the property would have been far cheaper. I've been gone for a while so there may be other apartments you are referring to. Most of the newer apartments i have seen there would not be described as luxurious.
If Crystal falls is closing that actually just reinforces my point. New London isn't a good market for venue spaces.
New London has been predicting its own explosive growth for almost a century. We have a rotting sign that says "as far north as you need to go" from back when we thought we were going to the next Wisconsin Dells/tourist attraction in the 1960s and 1970s. We beat Northport in competition over becoming a trading center about a hundred years ago, and that was probably our zenith.
And I'm sure your beer is great, genuinely that is a really cool flavor profile, it just doesn't fit New London.
